This 4-5 pound, boneless Colorado Lamb Leg Roast is a great year-round juicy and delicious centerpiece to any meal.

Cooking Times and Temperatures

When cooking a 4-5lb roast, cook at 325°F for the following times:

  • Medium-Rare (145°F) cook for 20-25 minutes/lb
  • Medium (160°F) cook for 25-30 minutes/lb
  • Well-Done (170°F) cook for 30-35 minutes/lb

The internal temperature of lamb will continue to rise 5-10 degrees after removing it from the oven. For this reason, remove your lamb leg roast from heat when it is 10 degrees lower than your desired doneness and let rest for 3 minutes.

To test your lamb’s degree of doneness properly, make sure to use a digital meat thermometer.
