The process of wet aging beef, like dry aging, has a big impact on tenderness. To do this, we seal beef in air tight packaging and refrigerate it at a carefully controlled temperature. Most beef sold in the supermarket today is aged for 5-7 days, while the beef served in restaurants is aged 14-21 days. This process gives the steak you order its incredible flavor and tenderness. At Lombardi Brothers Meats we age all of our beef for a minimum of 21 days.

When dry aging, meat is stored, without packaging, on racks in a specially designed refrigerated room. During this closely monitored process, the meat undergoes dehydration. As a result, moisture evaporates from the outside of the meat, while the flavor concentrates on the inside. 

At Lombardi Brothers Meats, we dry age our meat in a state of the art, oak beamed refrigerated room. This gives the meat a unique steakhouse flavor, often referred to as “nutty”.

The most important part of the process, however, is not science or facility. Instead, it is the meat cutter, who brings art and skill to the process, founded in years of experience. Ultimately, this expertise and watchful attention to detail, transforms an average cut of beef into a sensory sensation.
