Prime Top Sirloin Chateau Roast with a Tangy Cranberry Glaze

2 1/2 pounds Certified Angus Beef ® Prime Sirloin Chateau Roast
1/2 Teaspoon coarse ground pepper
1 teaspoon kosher salt
1/2 cup chopped fresh cranberries
1/2 tablespoon minced fresh ginger
5 1/4 ounces jar cranberry relish
1/2 tablespoon chopped parsley
1/2 tablespoon orange zest
- Pre-heat oven to 450ºF.
- To begin with, season Top Sirloin Roast with salt and pepper. Then, in a medium mixing bowl, stir together cranberries, cranberry relish, ginger, orange zest and parsley. Reserve 3/4 cup of mixture for serving and then coat remainder over top of roast. Line bottom of roasting pan with foil then place rack on top followed by seasoned roast.
- Roast for 15 minutes then reduce heat to 325ºF and cook for an additional 1 hour and 3 minutes or until internal temperature of roast reaches 125ºF for medium rare.
- Remove roast from oven to a carving board, then tent with foil and allow to rest for 15 minutes. Once roast has reached your desired internal temp, slice and serve with reserved cranberry mixture.
